In Port Vila that can mean grilled snapper, tuna cooked simply with lime and chilli, or coconut-basted reef fish. Look for the daily catch on a menu, served with citrus that brightens rather than hides the fish.
Island classics worth ordering
Island food in Vanuatu leans on root vegetables and fresh produce, often cooked gently and slowly. A few dishes to spot on a menu:
- Laplap — grated manioc, taro or yam wrapped in local leaves and slow-steamed. It is the national dish, and comes in both meat and vegetarian versions, always filling.
- Palusami — an island green baked in coconut cream, rich and comforting.
- Bulgur with fish — a rice-and-fish one-pot steam plate, simple and satisfying.
- Island cabbage — greens cooked with coconut cream; almost always worth ordering.
Evenings by the water
In the evening Vila's waterfront comes alive, with kiosks and kitchens firing up for dinner. This is when fresh fish, chilli and coconut are coming out fresh. Ordering a little before you intend to eat helps you land closer to when the kitchen is actually ready to cook, and avoids the busy window.
